Dutch chef Syrco Bakker spent more than a decade cooking in the Netherlands, first under the legendary Jonnie Boer and then Sergio Herman at the three Michelin-starred Oud Sluis. His most recent stint was at star Pure C, a seafood focused restaurant flanking the North Sea in Zeeland, which earned him the star studded title of Gault&Millau’s Chef of the Year in 2022, and 2-Michelin stars.
In November 2023, Syrco opened much-anticipated Syrco BASÈ in Ubud in Bali. Moving to Indonesia was a homecoming of sorts; Syrco’s grandparents hailed from Sumatra and Java. At Syrco BASÈ, the focus is on sourcing and sustainability, with an all-star lineup of locally sourced ingredients, including from the restaurant’s own garden. Their mantra is “Traceability, Transparency and Nature”, with menus strongly rooted in Balinese and Indonesian flavours, but with modern technique and a smorgasbord of forgotten and little-known ingredients.
It’s this unwavering commitment to great produce that Syrco will bring to 1880, a members club in Singapore that exists to inspire conversations, for the nights of March 13 and 14 (note, these events are open to the public). On each night he will present a tasting menu showcasing a dedication to quality, sustainability, and innovation.
